Sugar Cookies

I had a fabulous sugar cookie this week from Blue Lemon, and since then I've been wanting to make some of my own.  I need help with the frosting though. I believe frosting is more important than the cookie itself.  It's true.  Do you know of a fabulous frosting recipe?  Until I find one, these cookies will be naked.

Yes I do! Try it- you'll have to improvise and add more powdered sugar if its too thin. But this is a good one!

CREAM CHEESE FROSTING

1 8-ounce package cream cheese, softened

1/2 cup butter, softened

2 teaspoons vanilla

5 3/4 to 6 1/4 cups sifted powdered sugar

Directions:

Beat cream cheese, butter, and vanilla with mixer until light and fluffy. Gradually add 2 cups of the powdered sugar, beating well. Gradually beat in additional powdered sugar to reach spreading consistency. This frosts tops and sides of two 8 or 9 inch layers. (Half of this recipe will frost a 13x9x2 inch cake)

This one is by far my favorite because it hardens a bit when it dries and gets glossy. It's terribly simple and tastes amazing without detracting from the cookie.
